Butter Bean and Tomato Bake
This is a very easy vegetarian dinner, perfect for Meat-Free Mondays! Just add some crusty bread and a leafy green salad.
Or if you prefer, a side-dish to a roast or grilled meat.
It’s also the perfect dinner if you are on a budget or haven’t been to the shops and need to scrape up a meal from pantry staples! It will also work well with just about any type of cheese on top.
This dish would also be great for breakfast with some eggs cracked on top and baked in the last five minutes of the cooking time. Much healthier than canned baked beans which can often contain a lot of sugar and salt!
Beans have all sorts of health benefits and butter beans are very mild in taste, so a great choice to start the kids on.I always look for organic tomatoes and beans and try to choose cans that have a BPA free lining as this can be problematic for our health.
Of course, I also used my Vegetable Broth Salt to get some extra goodness and flavour in to the dish!

- 1 tin whole tomatoes
- 1 tin butter beans, drained
- 1 small onion, sliced
- 2 garlic cloves, crushed
- ¼ cup fetta
- ½ tspn oregano
- ½ tspn Vegetable Broth Salt
- squeeze lemon juice
- black pepper to taste
- Pre-heat oven to a medium temperature.
- Mix all ingredients together except fetta.
- Place into a small baking dish and top with fetta.
- Bake for 15 to 20 minutes.
