Boxing Day Bubble & Squeak
Boxing Day Bubble and Squeak is a great way to use up leftovers after Christmas. Throw in all your leftover veggies and even roast meat or ham if you like.
These are perfect to serve with salad and left-over cold meats. I use my Bacon and Broth Salt but you can use any of the broth salts in this recipe. If you have some fresh herbs in the garden, throw those in too! It’s a really forgiving recipe and you can put just about anything into them.
I have used roast potato, roast sweet potato, roast pumpkin, roast parsnip, carrot, broccoli, cauli, cabbage and spinach in mine.
Thermal cooking machine:
Add 1 onion and 1 to 2 cloves of garlic to the bowl.
Mix sp 7, 3 secs.
Scrape down.
Add in a decent splash of cooking oil and cook Varoma sp 1, 3mins.
Mix in the leftover veg, mix sp 6 up to 10 secs (scrape down and repeat if necessary).
Add in 1 to 2 eggs (2 if veg goes above 1/2 the bowl) and add Bacon and Broth Salt and pepper to taste.
Mix sp 5, 6 secs.
Spoon out patties into a hot frypan with olive oil and cook until crispy and warmed through.
Conventional Method:
In a large bowl, mash together left-over veggies. Add Bacon and Broth Salt and pepper to taste.
In a frypan saute finely chopped garlic and onion (in oil or fat of choice)
Add the onion and garlic into mashed veg and stir through.
Mix through 1 or 2 eggs (depending on amount of veg) with a wooden spoon.
Spoon out patties into a hot frypan with olive oil and cook until crispy and warmed through.
