Briami - a delicious roasted vegetable recipe
- Eggplant
- Zucchini
- Carrot
- Sweet potato
- White potato
- Tomato
- Red onion
- Mushrooms
- Capsicum
- 3 garlic cloves, crushed
- 2 tablespoons tomato paste
- ½ cup extra virgin olive oil
- ½ cup water
- 2 tablespoons Vegetable Broth Salt
- 2 tablespoons oregano
- pepper to taste
- fresh parsley to garnish
- feta cheese to garnish (optional)
- Heat oven to 200oC.
- Cut your vegetables in approximately the same size.
- Mix the olive oil, tomato paste, water, garlic and oregano together.
- Add to the bottom of a large baking tray.
- Arrange vegetables on top.
- Sprinkle with Vegetable Broth Salt and pepper.
- Cover with foil and cook for approximately 30-40 minutes.
- Take off the foil and cook a further 10 minutes until the vegetables are soft.
- Let it rest for 10 minutes.
- Garnish with parsley and feta.
