Briami - a delicious roasted vegetable recipe

Ingredients
  • Eggplant
  • Zucchini
  • Carrot
  • Sweet potato
  • White potato
  • Tomato
  • Red onion
  • Mushrooms
  • Capsicum
  • 3 garlic cloves, crushed
  • 2 tablespoons tomato paste
  • ½ cup extra virgin olive oil
  • ½ cup water
  • 2 tablespoons Vegetable Broth Salt
  • 2 tablespoons oregano
  • pepper to taste
  • fresh parsley to garnish
  • feta cheese to garnish (optional)
Instructions
  1. Heat oven to 200oC.
  2. Cut your vegetables in approximately the same size.
  3. Mix the olive oil, tomato paste, water, garlic and oregano together.
  4. Add to the bottom of a large baking tray.
  5. Arrange vegetables on top.
  6. Sprinkle with Vegetable Broth Salt and pepper.
  7. Cover with foil and cook for approximately 30-40 minutes.
  8. Take off the foil and cook a further 10 minutes until the vegetables are soft.
  9. Let it rest for 10 minutes.
  10. Garnish with parsley and feta.
