Cheesy Vegetable Stacks for the Airfryer

Ingredients
  • Zucchini or eggplant
  • Rocket or spinach
  • Tomato
  • Onion
  • Mushroom
  • Bocconcini cheese
  • Vegetable Broth Salt
  • Dried basil
  • Dried oregano
  • Black pepper
  • Extra virgin olive oil
Instructions
  1. Cut the zucchini, tomato, onion, mushroom and cheese into slices.
  2. Drizzle with the olive oil.
  3. Sprinkle black pepper on the tomato slices.
  4. Stack your vegetables, using the zucchini on the bottom to hold in place.
  5. Top with the bocconcini and dust with Vegetable Broth Salt and herbs.
  6. Cook in your air fryer for 9 minutes at 200 degrees celsius.
  7. Or roast in a medium oven for 15-20 minutes.
