Easy Potato Salad with Ham and Eggs

Ingredients
  • 4 medium potatoes
  • 2 boiled eggs, peeled, cooled and roughly chopped
  • ⅓ cup chopped ham (or cooked bacon)
  • 2 green spring onions, chopped
  • 2 heaped tablespoons sour cream
  • 1 teaspoon Vegetable Broth Salt
  • chopped chives to garnish
  • freshly ground black pepper
  • good quality salt
Instructions
  1. Peel and cut potatoes into bite-sized chunks.
  2. Add to a large saucepan and just cover with water.
  3. Add salt and boil on a medium heat, until just tender.
  4. Drain and rinse with cold water.
  5. Allow to cool.
  6. Mix the rest of the ingredients in a bowl.
  7. Toss through the cooled potatoes.
